Toulouse Sausage originates, like the names suggests, from Toulouse in the Southwest of France. It is made from pork (approx 75% lean and 25% belly), seasoned and wrapped in a natural casing. The structure of this sausage is a bit coarse (chunky). Toulouse Sausage is great on the bbq, or fried in a pan.
