Grilled Peach Chicken & Marinated Goat Cheese Salad

INGREDIENTS

For Spiced Grilled Peaches:

  • 6 peaches halved
  • 2 tbsp 5-Spice Seasoning
  • 2 tbsp sugar
  • 1 tbsp olive oil

For salad:

  • 170gr chicken breast boneless, skinless
  • 6 cups spring salad mix
  • 1 cup cherry tomatoes sliced in half
  • 1/3 cup marinated goat cheese
  • 1/4 cup crumbled bacon pieces
  • 1-2 tbsp. oil
  • 1 tsp garlic powder
  • 1 tsp rosemary
  • salt/pepper to taste

For the Balsamic Vinaigrette

  • ¼ cup olive oil
  • 2 Tbsp balsamic vinegar
  • 1½ tsp. Dijon mustard
  • 1 Tbsp honey
  • 1 clove garlic minced
  • Salt and pepper to taste

METHOD

  1. Season chicken with garlic powder, rosemary, salt/pepper to taste. Heat stovetop grill to medium heat and add oil. Add chicken to grill and cook for approximately 6-8 minutes on each side until cooked throughout. Set aside.
  2. Preheat grill for the peaches. In a large bowl, add 5-Spice Seasoning, peaches, sugar, and olive oil. Toss until peaches are coated evenly.
  3. Place peaches on the grill, flesh side down, for about 3 to 5 minutes. Turn over and grill for about 1 minute. Peaches should have grill marks, but still slightly firm to hold shape.
  4. In a large bowl, mix together the spring salad mix and grape tomatoes. Arrange the salad on a large platter and add grilled peaches on top.
  5. Slice grilled chicken and place it on top of the salad. Sprinkle goat cheese and bacon pieces on top.
  6. To make the dressing: add olive oil, balsamic vinegar, Dijon mustard, honey, garlic, salt/pepper to a jar with a lid and shake vigorously until all ingredients are mixed well.
  7. Drizzle dressing over the salad and serve!
